The Origin of Everything: The Story Behind MATRICE

Today, we know each other through the frantic pace of the big city, the clatter of its terraces, and the glow of its sky. But if we dig deep enough, if we silence the traffic and listen closely, history whispers another truth to us.

Over fifteen hundred years ago, this piece of land was not a capital, but a secret of nature. The Hispano-Roman and Visigothic peoples walked among hidden streams and underground currents. The main channel, that living water that flowed freely through what is now Calle Segovia, they called Matrice: the "mother of waters," the matrix, the origin of everything.

From that invisible channel sprang what we are today. And from that same matrix of the earth, our cuisine is born today.

At MATRICE, we highlight the flavor of the products from the Community of Madrid and the work of our local producers. We not only pay tribute to Madrid’s first name and its founding river, but also to the purest concept of cuisine with roots: the origin that nourishes the dish, the authenticity that needs no disguises, and absolute respect for the raw ingredients.
